I only used one potato, so I cut it down, but it's pretty easy to reapportion. I used skim milk instead of whipping cream, and I mashed it by hand instead of using a mixer.
The most interesting part of this was that is has you boil the (whole) garlic cloves WITH the potatoes! I've always just minced them and mashed them, but of course, it doesn't get cooked that way. I was unclear whether or not to pick out the garlic before mashing, but I left it in, since I love me some garlic.
It was pretty great, and it tasted great the next day too!
